小时候在无锡听老祖母说,她常住的佛学会里曾住过一对印尼归侨,女的不习惯中国的吃和天气,老是冲丈夫发火,叽叽哇哇说着别人听不懂的印尼话,做那些看着都咽不下去的东西。但我们来此的第一顿饭就吃得很舒服。在Jiang 的家里,陈师母婆媳带着佣人,每天花样不同地让我们品尝印尼饭菜,伊凡为我们做他的拿手菜,椰香阵阵、味道辛辣的印尼菜,令人难忘。印尼的家常菜做法确与我国大不同,他们猪肉用得少,牛肉鸡肉吃得多,虽炸煎居多,仍觉清淡可口,营养丰富,汤汤水水尤合我的胃口。一餐饭,佐以数种调料,椰子酱、虾酱、花生酱、咖喱汁椰汁。。。吃起来,甜辣是印尼菜肴的特点.有一种用椰树汁做的甜酱油是我们中国是没有的,陈先生说刀砍椰树,用流出的汁做酱油,这椰子树就不结果了,因为果汁没有了。

有道印尼的家常菜,叫“加多加多”,就是凉拌的沙律。用料丰富,满装一盘马铃薯、豆角、芽菜、青瓜、炸豆腐、熟鸡蛋,外加虾片。浇上用南姜、香茅、青柠、花生、椰汁调出的“加多加多酱”,浓香有淡淡酸甜,这便是印尼菜的精髓。

 

Soto ayam很有意思,鸡汤另外盛,鸡肉撕碎装在一个盘里,旁边有几种调料。陈师母教我们放点饭在盘子里,抓点鸡肉来,浇上甜酱油和辣酱,再加点蔬菜,拌以几勺鸡汤,滋味是好,还简单。国内炖鸡汤,往往是只喝汤,炖老的鸡肉没人要吃,成了负担。相比,印尼这个吃法好。

 

印尼咖啡闻名于世,印尼华人也都有喝咖啡的习惯,或是加糖的英式红茶,喝中国茶的并不普遍。他们的餐桌上少不了的是油炸虾片,这在中国还是比较贵的东西。

Something about Indonesian food

 

When I was a child in hometown Wuxi, my old grandmother once told me that she had lived in the Buddhist Research Institute, there lived an old couple, come back from Indonesia, the lady was not accustomed to the Chinese food and weather, she always complain and angry with her husband. No people understand what they said, and their food, we chinese can't swallow the food they cook.

 

But we were very comfortable with our first meal. In Jiang's home, Mrs. Chen and her daughter in law ( Jiang’s wife ) lead the servant everyday, let us to eat the diffirent Indonesian traditional food, Ivan also shown his favourite cooking food for us. The sweet smell of the coconut, the spicy taste, Indonesian food made us unforgettable.

 

The way of cooking the Indonesian traditional food is really different from our country, they use less pork, eat much beef and chicken, although fried mostly, but the taste is still light and delicious, nutritious, always have the soup, it’s just fit my taste. Everytime to have dinner, served with several spices, coconut sauce, shrimp sauce, peanut butter, curry juice, coconut milk... When eating, you will find sweet and spicy is the characteristic of Indonesian cuisine.

 

There is a kind of sweet soy sauce made by coconut juice, which we don’t have in China. Mr. Chen said that people use the knife to cut the coconut tree, juice water flows out of the tree. Use such juice to make soy sauce. the coconut tree will not grow the fruits, because the juice is gone.

 

Another kind of food in Indonesia is very popular, called Gado-gado. It is the salad of coleslaw. The materials are rich, with a plate of potatoes, beans, bean sprouts, green melon, fried tofu, boiled eggs, and shrimp slices. Then, pour with the "gado-gado" sauce which made by southern ginger, xiangmao, green bean paste, peanut, and coconut. The aroma is sweet and sour, this is the essence of Indonesian food.

 

"Soto ayam" is very interesting, the chicken soup is in a pot, and the chicken meat is put in a plate, several kinds of seasonings arounded. Mrs. Chen teaches us to put some rice on the plate, grab some chicken, pour sweet soy sauce and hot sauce, add some vegetables, mix with a few scoops of chicken soup, simple but delicious. In China, people prefer to drink the soup, no one like to eat over-stewed chicken meat, sometimes even throw it away. I think "soto ayam" is a good way to eat the chicken in China.

                                                                                                    

Indonesian coffee is famous in the world, and Indonesian Chinese have the habit of drinking coffee, or the British black tea with sugar. It is not common to drink Chinese tea here. They always have fried shrimp on the table, which is more expensive in China.
